Individual banana and blueberry crumble

Ingredients:

Fruit base

  • 1 ripe banana
  • 6 tablespoons fresh blueberries
  • 2 teaspoons raisins
  • 1 teaspoon maple syrup
  • 1/2 teaspoon cinnamon

Crumble topping

  • 4 tablespoons oats
  • 1 teaspoon sunflower seeds
  • 1 teaspoon chopped walnuts
  • 2 tablespoons coconut oil (melted)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon

 

Method:

  • Preheat oven to 180 degrees
  • Slice banana and add to a bowl with the rest of the fruit base ingredients. Combine and divide between two individual ramekins.
  • Place in the oven for 10 mins
  • Combine all the dry topping ingredients in a bowl. Melt the coconut oil in the microwave and add to the bowl with the maple syrup. Combine the wet and dry ingredients.
  • Remove ramekins from the oven. Divide the topping between the two and place back in the oven for 15 mins.
  • Enjoy !

 

This is the BEST comforting treat. I love to eat it warm from the oven with a big dollop of coconut dairy free ice cream. The crunchy topping contrasted with the soft fruit base give this desert a really great texture. Completely naturally sweet, with no added surprises to worry about, it never hangs around long enough to have to worry about storing left overs !
